Our Fermentation Philosophy
We honor the rhythm of the vineyard by allowing nature to guide our winemaking. Our wines are crafted through traditional whole-cluster fermentation — a time-honored method where intact grape bunches, stems and all, are fermented together. This approach deepens character, brings elegance, and weaves complexity into every vintage.
With minimal intervention, we let the fruit and the terroir speak for themselves. No shortcuts, no unnecessary manipulation — only the gentle hand of tradition. Once fermentation is complete, our wines rest in 100% French oak barrels, then continue their quiet refinement through extended bottle maturation, gaining harmony and depth over time.
The result is a wine that is alive: vibrant, structured, and made to age with grace.

Madame Souchay
Chenin Blanc
Anne Souchay’s spirit was one of quiet resilience & refined strength. Born into a lineage of merchants and lawyers, she carried grace and intellect across oceans. It is in recognition of her aristocratic bearing that this wine carries her title — Madame Souchay — a tribute to her dignity as much as to her courage.
This Chenin Blanc honors her with elegance and depth. From the granite-rich soils and sunlit slopes of Paarl, the wine’s gold fruit of ripe stone fruit, quince, and honey — fuller and richer than the Loire’s crisp, steely Chenins, yet retaining a lively freshness. The contrast mirrors Anne herself: grounded in heritage, yet transformed by a new land.
Susanne Foucher
Bordeaux Style Blend
Susanne, daughter of Philippe and Anne, was born on South African soil — the first heir to a new chapter of the family’s story.
This Bordeaux-style blend celebrates her role as a bridge between the old world and the new. The Bordeaux mix grapes of Paarl’s terroir yield a wine of dark plum, cassis, cedar, and spice — rounder and fuller than the Loire and Bordeaux equivalents, yet with elegance and harmony at its core.
It is a wine of balance and promise, just as Susanne embodied both heritage and hope.


Philippe Foucher
Syrah
Philippe Foucher was a man of conviction — rooted in the fertile soils of the Loire Valley, yet bold enough to cross oceans to cultivate a new destiny. This Syrah reflects his strength and perseverance.
On Paarl’s warm, rugged slopes, Shiraz ripens to bold black fruit, pepper, and spice — richer, more robust than the lighter, cooler expressions of the Rhône Valley near his homeland.
It is a wine of structure and intensity, mirroring Philippe’s steadfast resolve.
Bernard Foucher
Cabernet Franc
Bernard Foucher, father of Philippe, embodied the firm hand of tradition — a guardian of the old ways, yet a figure whose influence stretched into new generations.
This Cabernet Franc bears his name, honoring both lineage and strength. Paarl’s decomposed granite soils and sunlit slopes produce Cabernet Franc with deep red fruit, graphite, and herbal complexity — broader and more generous than the Loire’s leaner, cooler style.
